Banana Splits!

We made delicious banana splits that we absolutely go bananas for! We blowtorched our bananas that were sprinkled with sugar, then scooped some creamy vanilla ice cream and then drizzled with caramel! For a nice final touch, we put our delicate doodads that we made last class. Mmm!

We made this amazing peanut brittle in under 20 mins! Crunchy, sweet, absolutely delicious! Yum!

Buttercream Icing Cupcakes!

We practiced icing phrases and words in delicious buttercream icing on our fluffy yellow cupcakes. Delicious!

Gary the Cupcake Snail

Our latest project was to make a mosaic out of cupcakes! Our mosaic was of a small, adorable, purple and blue snail named Gary. We used buttercream icing, mini yellow cupcakes, and food colouring to bring Gary to life!

Halloween Pumpkins

Lets backtrack a little alllll the way back to Halloween....To add to the overall spooky effect of Halloween, we carved pumpkins! (Although apparently my "pumpkin" wasn't actually a pumpkin...It was a Gourd!) Being the cat lady that I am, I decided to make mine a slightly Hello Kitty inspired cat pumpkin. Tail included! MEOW!


Gingerbread House

Its that time of year again! I can just hear those jingle bells...

We started our Gingerbread Unit! (Which is absolutely hell to clean). I decided to make a barn for Rudolph and Santa's other hard working reindeer. Needless to say, it didn't go exactly as planned...




Spider Web Cookies

In the spirit of Halloween, we made spooky spider web cookies using royal icing and lots of black magic! They turned out absolutely delicious. A cute treat to leave out for those pesky Trick-Or-Treaters!



Rainbow Cookies!

Today we made delicious rainbow cookies! Using a relatively small amount of dough, we made over 80 delicious, colorful cookies.

We definitely "Tasted the Rainbow"!




Recipes for Carrot and Dog Loaf

Ingredients:

•30ml flour
•2 eggs
•185ml sugar
•5ml baking powder
•5ml salt
•2ml baking soda
•2ml cinnamon
•2ml nutmeg
•125ml vegetable oil
•5 ml vanilla

Carrot Loaf:

•250ml carrots
•250ml coconut
•185ml hazelnut

Dog Loaf:

•250ml zucchini
•250ml dried oats
•185 ml dates

Equipment:

•4 loaf pans
•measuring spoons
•chopping board
•knife
•liquid measure
•small metal spatula
•whisk
•large bowl
•medium bowl
•custard cup
•dry measures
•silicon spatula

Method:

1) Preheat oven to 180 C or 350 F
2) Grease loaf pans
3) Mix dry ingredients in large bowl
4) In a medium bowl, whisk dry ingredients
5) Add wet ingredients into dry ingredients
6) Shred vegetable, pat/squeeze dry and add to mixture
7) Chop nuts, add to mixture with coconut/rolled oats
8) Fold mixture and spread into loaf pans
9) Bake for 30-45 mins
10) Cool for 10 mins
11) Add glaze

Cream Cheese Glaze Ingredients:

•250ml icing sugar
•45ml cream cheese
•30ml milk
•1ml vanilla

Lime Glaze Ingredients:

•250ml icing sugar
•15ml milk
•15ml lime juice
•5ml lime zest

Steps:

1) Whisk all ingredients together
2) Spread on cooled loaf
3) Enjoy!

The "Dog" Loaf

This special loaf, aptly named by none other than the great Lochlan Fisher, the great Venezuelan Scottish Lord, consists of a beautiful balance of zucchini, dried dates, and rolled oats with a lime citrus glaze.

The savory taste of the rolled oats and the zucchini add a subtle contrast to the sweetness of the lime glaze and the dried dates, procuring a lovely harmony between sweet and savory.

Carrot coconut loaf with hazelnuts and pecans, topped with a cream cheese icing.

Spiced with a pinch of cinnamon and nutmeg.

Delicious! The cinnamon and nutmeg added an excellent touch to the coconut, and gave it a homey, Christmas feel.
